There is truly something wonderful about fresh from the tree peaches. My favorite summer dessert is peach cobbler.
It’s easy, it feeds a lot of people and its sooooo good. Sunday I made some so I had an excuse to invite some friends over and everyone loved it. It’s kind of a mix between a cobbler and a crisp with the brown sugar-oatey goodness on top. Try it for your next get together, no one will complain I can promise you that!
Perfect Peach Cobbler
4 cups peeled, sliced peaches
1 cup sugar
1/2 cup water
1 cup all-purpose flour
1 cup old fashioned oats
3/4 cup light-brown sugar
1 tsp baking soda
1/4 tsp salt
1 stick butter
Combine the peaches, sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.
In a mixing bowl whisk together flour, rolled oats, light-brown sugar, baking soda and 1/4 tsp table salt. Place butter in a microwave safe bowl and heat butter in microwave until melted. Pour melted butter over dry ingredients. Using a fork, stir well to evenly coat.
Pour peach mixture into a oven safe dish- i use my dutch oven. Then pour the crumb mixture over top. Bake at 350 for 30-40 minutes, until golden brown on top. Serve with vanilla ice cream and Enjoy!
