Yesterday I had lunch with some good friends and I was feeling like eating a really good treat. I mean when do I not feel like eating a really good treat? anyway I decided to whip up some gooey butter cake. I hadn’t made this in quite a while and let me tell you this is definitely a dessert to write home about, or write a blog post about. It’s really simple to make and the results are out of this world good. Make it for your next party, or maybe just because its thursday :)…
Gooey Butter Cake
First Layer:
1 pkg. yellow or white cake mix
1 stick (1/2 c.) butter, melted
1 egg
1 stick (1/2 c.) butter, melted
1 egg
Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9×13 inch cake pan.
Topping: GOOEY BUTTER
1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 (1 lb.) box confectioners’ sugar- (or 4 cups)
1 tsp. vanilla
2 eggs

Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Beat for 5 minutes. Pour over cake mixture, spreading to the edges. Bake at 350°F for 25 minutes. Watch for edges to barely turn golden brown. Cake will be a little jiggly and have a thin crust over the top when it’s done.
Make sure to let the cake cool completely before serving or it will be very runny. I usually put mine in the fridge for 5-6 hours or in the freezer for 1-2 hours if i’m in a hurry. Enjoy!
