Hi Friends! Happy Monday. It’s fall which means its soup time, right?! I made this last week and really loved it. As with any chicken & dumpling soup you must must make the dumplings. The good news is that these are pretty darn easy especially if you have a stand mixer and a roul’pat. If you roll anything out ever you totally need a roul’pat you don’t have to use any flour and its completely non-stick, i can’t say enough how much i love it. Anywho, lets get on to the recipe…
Chicken & Dumplings
3 cooked shredded chicken breasts
1 tablespoon olive oil
1 small yellow onion chopped
3/4 cup thinly sliced celery
3/4 cup carrots cut into 1/4″ slices
6 cups chicken stock
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
1/4 cup plus 1 teaspoon milk
1 large egg
1/2 tsp dried thyme
3 tablespoons heavy cream
1. Cook your chicken breasts however you like (i baked mine at 350 for 30 minutes) and then shred. set aside.
2. Heat the olive oil in a large stock pot and saute the veggies until softened. Add the stock and bring to a simmer.
3. Make the dumplings: combine the flour, baking powder, salt, pepper, milk, egg, and thyme. ( i used my stand mixer) Mix until combined and then roll out onto a roul’pat or floured surface. Roll it out until its around 1/2″ thick and then cut into 1″ squares, as you pick up each piece roll them into balls. Once all the dumplings are made go back to the stock and season with salt and pepper, and return the chicken to the soup.
4. Whisk in the cream until incorporated and then drop in the dumplings. Let them simmer until puffed and cooked through about 10 minutes. Serve once the dumplings are cooked!
So i thought i would start doing some updates on our family for our extended family. Here are a few things from the last few weeks, row by row.
1st row: Saturday we took the kids to Boo at the Zoo and they got to wear their costumes for the first time. Max was ecstatic when we pulled out the buzz costume and showed him. As soon as he put it on he kept reaching his arms up in the air and saying “to infinity and beyond!” and “I’m buzz lightyear!” June is probably going to hate us when she’s older since her costume is an alien, at least i added a pink flower at the top, right?
2nd row: Max is at this really annoying stage where he takes off his clothes multiple times a day. Its really frustrating, any help advice would be appreciated. June and I were together alone while the boys went to Vegas to visit with the Muir family and so we had some quality mommy-daughter time. She is such a cute girl, sweet and happy tempered most of the time- even with a double ear infection, soar through and 6 teeth coming through she still manages to be a sweet happy girl!
3rd row: My great-grandma Ruby passed away at 100, which is why June and i did not go to Vegas, but drove over to southern Illinois and attended the funeral and celebrated a very special woman. I will be doing a post on her soon. These pics are from the funeral, June loved spending some time with her uncle Roo and all the other family members there celebrating grandma Ruby’s life.
4th row: We had a really cold fall day on Friday, it was sleeting! so we turned on the fireplace made a fort and watched toy story (not like watching toy story is a departure from our regular day). As you can see in these pics Max is obsessed with wearing his “football shirt” and would wear it every day if i let him. Grandma Nay-Nay is very proud.
