Crispy Coconut Pecan Butter Cookies - Handmade in the Heartland

I think I’ve found my new favorite cookie, seriously. These crispy oat butter cookies are so good. I made them the week before Thanksgiving and I couldn’t stop eating them. They are kind of like a crunchy teeny bit salty shortbread cookie, I wasn’t expecting to love them as much as I do. Holiday baking is officially here and you can thank me after you make a batch of these for your friends because everyone will love them! I have to thank a good friend of mine for the recipe, Heather always has the best baking recipes and I’m glad she shared this one with me to share with you.

Crispy Oat Butter Cookies

Ingredients

1 cup butter
1 cup sugar
1 cup brown sugar
1 cup crushed cornflakes
1/2 cup shredded coconut
1/2 c chopped pecans
1 egg
1 cup veg oil
1 cup rolled oats (not quick)
3 1/2 c flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla

Instructions

Preheat the oven to 350.

Cream the butter and sugar until fluffy. Mix in the eggs, vanilla & oil. Next add the flour, soda, and salt. Last add in the oats, coconut, cornflakes and nuts and mix until combine.

Scoop with a small cookie scoop or roll into balls and bake for 8-10 minutes.
