So don’t tell my kids, but they’ve been eating carrots and sweet potatoes without even realizing it! These cookies are adapted from my very favorite cowboy cookie recipe that is Matt’s mom’s.  I usually get in trouble when i mess with it, he’s always telling me that trying to make a cookie healthy is like putting lipstick on a pig.  i beg to differ, and this time he actually liked the “healthy” cookie.  I’m sure he would say they aren’t as good as the original but i sure feel more justified in eating them. 🙂

Chocolate Chip Oatmeal Cookies with Hidden Veggies & Whole Wheat
So this recipe calls for 1/2 cup of orange puree, which is a equal parts carrot and sweet potato puree.  I use the sneaky chef cookbook a lot and so i have it on hand.  You can either omit it, or make some by steaming 1 sweet potato and 4 carrots then pureeing them in a food processor or blender, you will have lots of extra but its great to add to lots of things like quesadillas, muffin batter, pizza sauce, etc.
Ingredients
1 ½ cups white sugar
1 ½ cups brown sugar
4 sticks of butter
½ cup orange puree
4 eggs
1 tablespoon vanilla
2 teaspoons baking soda
1 teaspoon baking powder
2 ½ cups whole wheat flour
½ cup wheat germ
2 cups all-purpose flour
3 cups oats
1 ½ cups chocolate chips
1 ½ cups peanut butter chips (or just use 3 cups chocolate chips instead of pb)
 
Directions: 
Preheat the oven to 350. Cream the butter and sugars.  Add the orange puree and mix until incorporated.  Add the eggs. Add the vanilla, soda & powder. Add the flours one at a time and mix until combined.  Add the oats and the chocolate chips and do one last good mix to combine everything. 
Roll out into 1″ balls and bake for 8-10 minutes.  Really 8 minutes is plenty- mine came out perfectly moist and delicious, don’t over bake a cookie, that might be the biggest baking sin there is. 🙂 
Freezing Cookie Dough
This recipe makes a ton of cookies- like i counted 93 when i made this batch, so what i like to do is roll them all out but freeze about 2/3rds of the batch so that way i have cookie dough in my freezer ready to pop in the oven for any occasion.  I’m not gonna lie most of those dough balls get eaten as is (i eat raw eggs, what of it?).  Either way you have cookies for a while, or you can just cut the recipe in 1/2 which i also do when i don’t have the time/patience to roll out 100 cookies.
