During the dog days of summer we all need a cool refreshing treat and today I’ve got the perfect summer time treat for you.  This recipe for berries and cream frozen yogurt bites uses AE Dairy Greek Yogurt and fresh fruit to make a delicious frozen snack.  AE Greek Yogurt is especially creamy and freezes really well.  I bet you didn’t know that making frozen yogurt treats was easy- but it is, all you do is freeze Greek Yogurt!

For this recipe I used AE Vanilla, Blueberry & Strawberry Greek Yogurt flavors, but you should use any combination that sounds good to you and your family. I chopped up some fresh strawberries to add to these little treats to pack even more of a nutritious punch.  My kids love to come in and cool down with one of these little snacks after playing outside in the hot sun, and I don’t mind making them because they take no time at all!

AE Greek Yogurt might be one of the most versatile foods that I have in my fridge.  I use AE plain Greek Yogurt as a substitute for sour cream in baking, I use it as a marinade with spices for meat in my Indian recipes, I eat it for breakfast in all its many delicious AE flavors and it freezes for the perfect little snack! I’ve seen it frozen in a thin layer and then broken apart like bark, I’ll be trying that next!

Berries & Cream Frozen Yogurt Bites

Ingredients
  • 1 6oz. container each of AE Strawberry, Vanilla & Blueberry Greek Yogurt
  • 1/2 cup strawberries chopped very small
  • small popsicle sticks (if desired)
Instructions
In a mini muffin container spread a small amount of chopped strawberries in the bottom of each muffin well. On top of the strawberries using a spatula spread strawberry greek yogurt over them, filling only a 3rd of each muffin well. Freeze for 45 minutes. Once the first layer is frozen spread the vanilla yogurt over it, leaving some room for the final layer. Freeze for 45 minutes. Spread the final layer of blueberry yogurt to fill each muffin well. Freeze for 2-3 hours. I recommend taking them out of the muffin container and then letting them warm for 10 minutes before eating. Next time I will add popsicle sticks after I spread the final layer, that way kids will have something to hold on to to eat it like a popsicle. They do get messy as they melt so eating them with a fork is a good idea if you don’t use popsicle sticks.
