I know you are probably sick of all the pumpkin desserts that are filling up blog land right now, but sorry i’m not sorry because today’s recipe is out of this world good. These pumpkin cheesecake bars are seriously delicious, addicting and the perfect fall treat. You need them in your life, asap.
Pumpkin Cheesecake Bars with Chocolate Chips
Ingredients:
1 1/3 cups flour
1/2 cup brown sugar
3/4 cup sugar, divided
2 sticks cold unsalted butter, but into pieces
1 cup old fashioned oats
1/2 cup mini chocolate chips (i used regular size and i thought they were too big, i would def. recommend using mini)
1 8oz pkg of cream cheese, softened
3 eggs
1 15 oz can of pumpkin
1 tablespoon pumpkin pie spice
Directions:
Preheat your oven to 350. Spray/butter a 13×9 baking dish. With the paddle attachment to your mixer mix the flour, brown sugar, and 1/4 cup of the sugar with the cold butter until it resembles a crumb mixture. Mix in oats and mini chocolate chips. Remove 1 cup of the mixture and press the rest into the bottom of your pan. Bake for 15 minutes.
While the crust is baking you will make the cheesecake filling. Beat your cream cheese until smooth and creamy. Add the eggs, pumpkin, 1/2 cup sugar and pumpkin pie spice until well blended. Pour mixture over the crust when it comes out and then sprinkle the remaining cup of crumb mixture on top, it will not cover the entire thing, the cheesecake will show through quite a bit, just space it out over the entire top.
Bake for 30 minutes. Let cool and then put it in the fridge for a few hours to cool completely. Cut into bars and enjoy! I cut a few of mine into circles because i thought it was cute :). Do you have a favorite pumpkin dessert i need to try? Let me know in the comments.
