Happy Monday folks. Here’s to another week full of adventures 🙂 Should you be needing something warm and welcoming in your belly this week, maybe before or after you walk your trick-or-treaters around the block, i’ve got the perfect soup for you. This chili came to me by way of my very fabulous sister-in-law Sheena. I love it because its sweet (i have such a sweet tooth) and since it doesn’t have any meat in it i don’t feel bad leaving it in the fridge for a week or so to eat on here and there. It’s a great fall recipe so go ahead, whip up a big pot tonight!
Sheena’s Sweet Veggie Chili
1 small onion, chopped
1 can of chopped green chili’s
1 packet of McCormick’s tex mex chili seasoning
1 carton or 2 cans of chicken stock
2 8oz. tomato sauce
1 15 oz. can of chopped tomatoes with jalapenos
2 cans of each- black beans, pink beans, and kidney beans well rinsed.
1/2 cup brown sugar
a few dashes of Worcestershire sauce
1 package of frozen corn
Saute the onion and then add all the other ingredients. Bring to a simmer for 20 to 30 minutes and then serve! I like to serve mine with shredded cheese, sour cream and fritos corn chips. The recipe is so huge that a lot of the time i will bag up 1/2 of it and freeze it for later. Enjoy!
Here is my monday family update:
1st Row: Isn’t Junebug the cutest?! Matt snapped that photo of her with his glasses on and i just can’t stop looking at it. She has such a sweet little personality. Then on Sunday she didn’t get good naps and around dinner time she just crashed on the floor and slept for 30 minutes! Max is still having issues keeping clothes on, but one morning after he had stripped like 5 times i got him to put his buzz costume on and its so difficult to get on he couldn’t get it off! success!
2nd Row: Date night Friday was super fun. Matt and i went to cupcake a la mode- my favorite cupcakes in KC- before we went to see the foreigner at the KC Rep. I love the rep, always top quality theater!
3rd Row: I took the kid to Carolyn’s pumpkin patch on Tuesday, its a super fun place and on tuesdays and wednesdays from 4-6 its free. I was a little overwhelmed because Max kept running off and i lost him like 3 times. By the time we left i was more than ready. This kid man- he is too brave for his own good!
4th Row: June loves her big brother and has learned how he likes to play, so sometimes she just tackles him out of nowhere. It normally ends in her getting hurt, but i like to think that at some point it soon they will get the hang of playing together.
