I’m such a fan of Larabars and a little part of me kind of hates that I’m putting up a “copycat” recipe, but when they aren’t on sale for $1 I just can’t bring myself to pay $1.60 for something we eat 2-3x’s day in our house!
Our favorite flavor happens to be one of the more simple bars- Pecan Pie- which only has 3 ingredients in it, Pecans, Almonds & Dates. I found a few recipes online and then ended up tweaking the proportions a bit and came up with this recipe. Hopefully you’ll love it as much as we do.
Mine are a bit more crumbly and not as “wet” as a packaged bar but they taste delicious. I’m currently trying to persuade my sweet tooth that these will do for dessert. I might have to add some chocolate chips in them next time. 🙂 The recipe made 8 bars, I ended up cutting mine in squares because of the shape of my pan but I think they are still about equal size to a little smaller rectangle. When you do the math is much cheaper to make them, a bag of dates was about $3.25 at my grocery store. This recipe is made with a food processor, if you don’t have one, get one! Easy, delicious and healthy snacks for on the go!
I’ve been eating these instead of indulging in less healthy snacks and it totally curbs my sugar cravings!
This recipe for pecan pie lara bars is a simple and delicious healthy snack!
Ingredients:
- 1 cup pecans
- 1 cup sliced almonds
- 1 8oz. bag of dates
Instructions:
- Combine all ingredients in a food processor and process until smooth and the ingredients are made into a thick paste.
- Using a spatula pat the mixture into the bottom of a pan, you want it to be about 1/2″ thick. Pop in the fridge for an hour or so before cutting. Cut into squares or rectangles and place in individual ziplock bags. Keep in the fridge until ready to eat.
